Whitewater Burger

So firstly I have to admit that this is NOT my recipe. I got it from a glorious cookbook called WhiteWater Cooks. The cooking stems from the Nelson freshtracks cafe and everything I have made so far has been absolutely delicious. This is an omnivorous cookbook but there are TONS of hearty, flavourful, scrumptious veggie recipes and this is one.

If you have never had a veggie burger or you "tried ONE" once and it thought it was yucky then you have to try this! Trust me don't be scared when you hear the word veggie burger. They are definitely not all treated equal and I have come across many I do not like and this is not one of them! I froze 6 of these for Jeff to have while I was away working (so he could throw on the grill) and they were gone in 2 weeks! Yup... they're good... and filling!

The recipe is for 12! (and when I made a full batch it ended up being 14!) Wow! All their recipes are big but can easily be halved or reduced. I was going to reduce it for the blog but decided not too. I made 6 the first time started making 12 since we usually eat them for a night or two and then they are great to freeze in the summer for a quick bbq dinner.

INGREDIENTS:
1 Tbsp vegetable oil
1 onion, diced
1 clove garlic, minced
1 Tbsp cumin
1 1/2 Tbsp chili powder
1-19oz can black beans, drained, rinsed and roughly pureed
1 tsp oregano
1/4 cup parsley or cilantro chopped
2 Tbsp sesame oil
1/2 cup almonds, roasted and chopped
1 cup sunflower seeds, roasted and chopped
3 cups fine bread crumbs
1/2 cup soy sauce
5 eggs
2 cups carrots, grated
2 cups oats
flour for dredging
2 Tbsp vegetable oil

METHOD
In a large skilled, saute onions and garlic in oil. Place in large mixing bowl and let it cool a little. Add remaining ingredients. Mix well and shape into patties. Dredge lightly in flour. Heat vegeatble oil in a large pan to brown the burgers on both sides, you may need to do this in batches with a bit more oil.

To make REALLY easy aioli just put the desired amount of good quality Mayonnaise in a bowl, add a bit of olive oil and some minced  or roasted garlic (or dried if you don't have any) and some dried/fresh basil or thyme and some pepper. Simple!
